I made my own hummus for a while, and I found firstly that I don't like the taste of tinned chickpeas in comparison to the "real thing", secondly, if you get fresh dried chickpeas (if you know what I mean: not too old, because they dry out more over time) they don't take too long to cook, and you can cook them out so they just mush with a fork. You could possibly boil tinned chickpeas in a fresh change of water to soften them more too.
Of course, a food processor is probably the real way to go.
Also, if you're serious about low-fat, keep an eye on the tahini as it's quite high in fat.
I think if I was vegan, I'd eat a lot more baked pumpkin than I already do.
